It’s Valentine’s Day, and love is in the air. Today is the day we all need something sweet in our lives. While a dozen roses are lovely, it’s always better to add a Valentine’s Day dessert into the mix to show your love and appreciation, whether it’s for your significant other or even yourself. Plus, there is nothing better than a decadent and sweet Valentine’s Day recipe, especially one that is healthier than a box of chocolates. Plus, who doesn’t love a dessert recipe that is infused with love?

Gluten-Free Dark Chocolate Rose Cake Recipe
Ingredients:
For the chocolate rose cake:
• 2 cups of gluten-free flour mix
• ¼ cup of cacao powder
• ¾ cup of honey or maple syrup
• 2 tsp of vanilla extract
• 3 eggs
• 1 tsp of baking soda
• 5 Tbsp. plus 1 tsp of coconut oil
• ¼ cup of rose water
For the cashew cream icing:
• 2 cups of raw soaked cashews
• ¼ cup of coconut cream
• 3 Tbsp. of coconut oil
• 2 Tbsp. of water
• ¼ cup of maple syrup
• 2 tsp of beetroot powder
• ½ tsp of rose water
• Pinch of Himalayan pink salt
Directions:

2. Grease and line an 8-10” cake pan. Preheat oven to 350F.
3. Add all of the dry ingredients to a medium sized bowl and mix well.
4. Using a separate bowl, combine all of the wet ingredients and mix well.
5. Pour the wet ingredients into the dry ingredients. Mix well to combine.
6. Pour cake batter into a greased and lined cake pan.
7. Bake for 30 to 40 minutes, or until a toothpick comes out clean.
8. Let the cake cool before applying the frosting.
To make the cashew cream icing:
1. Place all of the ingredients into a food processor or a high-speed blender.
2. Blend on high until mixture is smooth and creamy. While blending, be sure to scrap the sides from time to time to incorporate all of the ingredients.
3. Transfer to a bowl and refrigerate for at least an hour.
4. Place frosting into a pastry bag fitted with a 1M star tip.
5. Pipe roses alongside the cake first, and then do the top. If unsure how to make a rose, there are plenty of helpful tutorials online!
6. Once finished, return the cake to the refrigerator to set the frosting.
