RC: Hello everyone, this is Liz Harvey coming to you from our studios in New York City where we are dedicated to bringing you top quality advice from many of the leading expert professionals across the US. In today’s episode, we are speaking with Dr. John Salerno, founder of the Salerno Center for Complementary Medicine in Manhattan on East 55nd Street between 5th and Madison Avenue. Lauded as an international pioneer in the field of anti-aging, Dr. Salerno’s techniques have been proven to slow the aging process and encourage a healthy and vitality-filled life for his patients through natural treatments.
Dr. Salerno is well known for his vitamin IVs, weight-loss treatments and chelation therapy. He is the author of two books, Fight Fat with Fat and Salerno Solutions, which are both available on his website, www.SalernoCenter.com. Today we are going to talk about a very important topic, why eating fat keeps you lean. Hello Dr. Salerno, how are you today?
Dr. John Salerno: Hi Liz. Thank you. I’m doing well. How are you?
RC: I’m doing great. Thanks for being here
RC: What role does eating fat play in a healthy diet?
Dr. John Salerno: Well, that is a great question. We like to advocate healthy, natural and organic fats that are critically important in our diet. These healthy fats allow us to absorb and they are also packed with plenty of nutrients such as, the fat-soluble vitamins A, D, E, K and they allow for the absorption of these vitamins into our systems. Without having these healthy fats, we would be deficient in these critically important vitamins. It also allows us to reduce the amount of carbohydrates and allows us our satiety, our hunger value to go down because fats are laden (of course) with healthy nutrients which keep us from getting hungry.
RC: How does fat help keep appetite under control?
Dr. John Salerno: Well, fat plays a role with hunger hormones such as leptin and ghrelin. This way it will raise the levels of hormones and it will allow us to feel more higher satiety and less hunger. Since they are laden with plenty of nutrients that work in the same level, we tend to be much more satisfied and it is a much easier diet, hence to follow with that regard.
RC: What are some fatty foods that we should add to our diet?
Dr. John Salerno: Good fats. We love organic butter and cheeses for those that do not have any allergies, of course. We like heavy cream. We like a good organic, grass-fed meat and steaks. They are critically important for both keeping our weight down and for energy.
RC: What are some fats we should avoid?
Dr. John Salerno: The fats that are problematic are trans-fats or what we would call partially hydrogenated fats. These are fats that you will find in cakes and french fries. For example, although most of that has been banned here in Manhattan, in other areas you should be quite careful of that. These are fats that are clearly detrimental. They will cause coronary artery disease. It is also an implication that these fats, these trans-fats can cause issues with cancers. My Fight Fat With Fat book has a good recommendations on where these hidden fats are and how to avoid them.
RC: Can eating fats give us energy like carbohydrates do?
Dr. John Salerno: Yes, even more so. In fact, a lot of my athletes will not ‘carb load’ before an athletic event but they will ‘fat load.’ They will reduce the carbohydrates for many reasons. There is high nutrient value in these fats and good fats and we can live and burn off fat more slowly, use it for longer period of times, particularly for long-distance running. We clearly find that by doing these fat fasts and/or high-fat protein diets, we can accomplish even more than what carb loading can. We also keep insulin down which keeps weight off because when insulin is elevated with too many starches and carbohydrates, we will tend to store body fat rather than burn it off.
