Chicken Thighs in a Mushroom Sauce Recipe

Ingredients:

2 cups chicken broth

1/4 cup tomato paste

1 teaspoon dried rubbed sage

Kosher salt to taste

Freshly milled black pepper to taste

4 Skinless, boneless chicken thighs

4 teaspoons Italian-seasoned breadcrumbs

1 tablespoon extra-virgin olive oil

1/2 pound sliced baby bella mushrooms

4 green onions, thinly sliced on the diagonal

Directions:

Combine broth with tomato paste, sage, salt, and pepper. Set aside.

Sprinkle chicken with additional salt and pepper and then breadcrumbs.

Heat oil in a large skillet and cook chicken 2-3 minutes per side. Add mushroom and brown them for 2 minutes, then add broth mixture.

Cover and cook until chicken is done, about 10 minutes. Sprinkle with green onions and serve.
