Low-Carb Chocolate Chip Cookies Recipe

Ingredients:

  • 1 cup almond flour
  • 2 tablespoons coconut flour
  • 2 tablespoons psyllium husk powder
  • 1 scoop protein powder (unflavored or vanilla)
  • 1 egg white
  • 1 egg
  • 4 tablespoons butter, softened
  • 4 tablespoons melted coconut oil
  • 9 ounces low-carb baking chocolate chunks
  • 1/3 cup xylitol
  • 1/2 teaspoon baking powder (aluminum-free)
  • 1/4 teaspoon baking soda

Directions:

  1. Preheat oven to 350 degrees F.
  2. In a medium-sized bowl, first, mix together all dry ingredients. Then add the eggs and beat with a blender or mixer until thoroughly combined.
  3. Add the coconut oil and butter, and beat for another minute or two.
  4. Add in the low-carb chocolate chunks and fold in thoroughly.
  5. Using a tablespoon, scoop out the dough to roll into balls. Place onto a parchment covered cookie sheet.
  6. Press firmly down on each cookie with the palm of your hand or a fork to flatten.
  7. Bake for 13-15 minutes.
  8. Allow to cool and enjoy.
