Fat Fast is the best treatment for our bodies because it will allow for insulin to be diminished dramatically. Lowering insulin reduces inflammation and it will also allow for the body to burn fat rather than store it.
Also, we’ve found that when the body preferentially uses ketones, particularly neurons or brain cells, brain cells respond, particularly those that are damaged like in dementia and Alzheimer’s and respond extremely well.

RC: Hello everyone, this is Liz Harvey coming to you from our studios in New York City where we are dedicated to bringing you top quality advice from many of the leading expert professionals across the U.S. In today’s episode, we are speaking with Dr. John Salerno, founder of the Salerno Center for Complementary Medicine in Manhattan on East 55nd Street between 5th and Madison Avenue. RC: Hello Dr. Salerno, how are you today?
Dr. John Salerno: Good, thank you so much. Thanks for having me.
RC: Well, thanks for joining me.
Can you describe what a ‘Fat Fast’ is and how long it should last?
Dr. John Salerno: Yes, we’ve actually over that last several years, decided that patients have very high levels of insulin and the only way to get these levels down is to eliminate carbohydrates almost completely. In fact, pretty much completely, meaning no more than zero to maybe four grams per day. High insulin causes, among other things, chronic inflammation. It tells the body to store fat rather that burn fat etc., so we decided to develop a Fat Fast, which is a 90% fat diet – essentially, again zero carbs and sugars and only a small amount (a good amount) of protein but mostly fat. This will lower insulin levels and most patients will stay on it for up to a month. We’ve had patients that were losing weight and feeling significantly better that would for much longer periods of time. Generally, patients will stay on it up to a month at a time.
Is the goal of a Fat Fast simply to lose weight or are there other benefits?
Dr. John Salerno: Oh no, there are other very important benefits. So for example, when we’re seeing even children that are having seizures and there’s hospital and studies, which have done this Fat Fast, like John Hopkins down in Maryland, where we’ve actually seen seizure disorder completely cured on children who used and followed the Fat Fast. We’re also seeing huge benefits now with dementia, Alzheimer, even some other neurological diseases like multiple sclerosis etc.
Do people have to meet certain requirements to start a Fat Fast or can anyone try it?
Dr. John Salerno: No, generally anyone can do it. It’s always highly recommended, of course, that you’re being followed by a physician when you are doing it and be directed as to the exact content and the quality of the natural fats that we recommend in the Fat Fast.
What are the best foods to eat during a Fat Fast?
Dr. John Salerno: We like things like chicken salad or shrimp salads. We like bacon, nitrate free, organic bacon is always recommended. Avocado is a great natural high food so we’ll recommend that and certain other cheeses and most cheeses are also recommended and are always well tolerated, particularly of course if our patients are not allergic to dairy or to cheese. These are the typical foods that we recommend in a Fat Fast.
After the Fat Fast is over, what type of diet is recommended?
Dr. John Salerno: Then we will allow and introduce more carbs in the way of vegetables, healthier carbs and eventually as patients continue to feel better and lose weight and exercise because they’ll gain energy back as they’ve done the Fat Fast, so, they’ll be motivated to get back into more physical activity. Then we will see them gaining carbs back and keeping the weight where it is dependent on how much physical activities they’re doing and in some cases, patients will even add back more complex carbs like multi grain breads and for example, some pasta or brown rice. Again, it’s very dependent upon individual parameters and activities.
